Polycarbonate is a kind of plastic that resists heat so even the high temperature in sous vide cannot adversely affect the material. It is also lightweight, and a better alternative to glass. The polycarbonate material holds the heat in the bath much better than the metal in a pot. Therefore less power is required from your immersion circulator.
